'Nduja Grilled Cheese with Honey Butter


This 'nduja grilled cheese is one of the easiest and most satisfying ways to prepare 'nduja.
A thin layer of honey butter adds just the right amount of sweetness to balance out the heat and richness of the 'nduja, that melts into the cheese. The outcome is melty, crispy, and a little surprising - in a fantastic way.
It's the type of sandwich you make once and then think about making again and again.
Ingredients
For the Sandwich
4 slices sourdough bread
2–3 ounces Porcellino ’nduja salami
4 slices sharp cheddar cheese
2 tablespoons unsalted butter, softened
For the Honey Butter
2 tablespoons unsalted butter, softened
1 tablespoon honey
pinch of flaky salt

Instructions
In a small bowl, mix the butter, honey, and a pinch of flaky salt until smooth. Set aside.

Spread the honey butter on one side of each slice of bread.
Flip the bread over and layer the cheddar cheese and ’nduja evenly between two slices, keeping the buttered sides facing outward.
Heat a skillet over medium heat. Place the sandwiches in the pan and cook for 3 to 4 minutes per side until the bread is golden and crisp and the cheese is fully melted.
Press gently with a spatula while cooking to help everything melt together evenly.
Remove from the pan, rest for 1 minute, then slice and serve.
Chef Notes
Balance is key here, and boy does it make a delicious, simple, sandwich. The honey butter softens everything just enough to prevent it from feeling too heavy, while the 'nduja adds richness and heat. This is definitely not your childhood grilled cheese!
Make sure you're cooking on medium heat, not high. The bread should gradually crisp while the cheese melts and brings everything together.
Substitutions & Tips
Gruyère or fontina cheese both melt beautifully and go well with 'nduja if you don't have cheddar.
Or add a thin layer of Dijon mustard inside the sandwich for a bit of a sharper bite.
Serving & Storage
Serve hot and melted right away. To balance out the richness, serve with some pickled veg, tomato soup, or a delicious salad of your choice.
Since melted cheese does not reheat well, we don't recommend that you store this in the fridge for later. It's best made fresh each time.
